"When you're browning meat, you should blot the surface dry with a paper towel so the meat doesn't release moisture when it hits the hot oil. Too much moisture makes the meat steam instead of sear, and you will lose that rich brown crust." - Charlie Palmer

  1. In a mixing bowl, combine ground beef, beaten egg, onion, garlic, salt and pepper. Mix until well blended. Make a burger patty shape and set aside. Grill or fry over medium-high heat, until both sides brown. Place on a platter.
  2. To make a sauce or gravy: Melt butter in a pan. Pour in 3/4 cup of stock. Add flour little by little while continuously stirring over low heat until flour is fully dissolved and the mixture changes to a light brown. Add the remaining stock and keep stirring until desired thickness is reach and smooth. Do not let it boil. Turn off heat and set aside.
  3. Add a small amount of butter in the pan. Saute button mushroom until light brown and pour over the gravy. Stir and heat for a few minutes. Turn off heat.
  4. Pour the sauce or gravy over burger patty and serve with steamed rice. Enjoy!
