Dilis or Anchovies are small salt water fish very common in the Philippines. aside from adobong dilis or binusa,
kinilaw na dilis is one of the popular dish for Filipinos like sashimi of Japan which is means raw. When ginger is combine with vinegar you can never taste the fishy taste of the fish. Try this one and you will never forget.
Ingredients:
- 1/2 kilo Dilis or Anchovies, cleaned
- 2 thumb size ginger finely chopped
- 1 small onion chopped
- 2-3 calamansi or lemon juice
- 2 pcs. siling labuyo
- 1/4 cup vinegar to taste
- salt to taste
Kinilaw na Dilis Cooking Instructions:
- Clean anchovies by taking off the head and reserve the fish fillet.
- Rinse with water and drain thoroughly.
- In one container, place anchovies and add some vinegar.
- Marinate for 5 minutes and drain excess water and vinegar.
- Add ginger, onion, siling labuyo and mix thoroughly but gently.
- Rub salt and drop some calamansi or lemon juice.
- Chill for few minutes and serve.
